Gluten Free Orange Cake

I am thrilled, things are happening.

A local cafe has offered to sell my gluten free orange cake, I took one into them last week for them to try. I am only charging £10 which is a little less than others more experienced to this will but it covers the cost of making the cake, and I enjoy doing it. So for now the fact that my cake will be consumed by the people on the street is rather exciting. Plus I have so much more to offer, plenty of ideas.

The lady who has offered did say that gluten free is one of those things that they get asked for once a fortnight, I am hoping that this cake can also be marketed as a lower calorie and lower carbohydrate option, surely I am not the only person on the island who has to watch their waistline but would enjoy a treat once in a while. Fingers crossed all goes well.

I am making the cake on tuesday and it has been suggested that I take it in on wednesday after work, however I have just realised I am in liverpool seeing DOLLY on wednesday so hopefully mum, who started all this gluten free business will take it in for me.

I live on the Isle of Man with my parents, one of which is coeliac. So no gluten!! My dad is fine, he can eat it all, he loves treats, cakes, breads, pizza pasta, but on the opposite side of the table theres my mother with her salad, potato and when it comes to treats she is pretty much restricted to chocolate or meringues.. or is she?

When cooking with no wheat and gluten you definately need to think outside the box. I myself can eat wheat but I chose not to consume too much of it, over the years I have tried so many diets and eating regimes and the only thing I have found that works is cutting out carbs, lets face it in our diets we consume a lot of bread, potatoes, pasta, rice and other grains. One simple way of cutting out the majority of this carb group is to cut out wheat, maybe try it for a while and see how you feel. I love bread, but what I am starting to love more is clothes that are looser fitting and having banished the bloat!
